Bienvenue au Château Coujan
In the heart of the Languedoc hinterland, a few kilometers from Murviel-lès-Béziers, are the lands of Château Coujan and its wines classified as AOP Saint-Chinian.
Five generations of winegrowers have made this area an authentic place now focused on organic cultivation and product diversification.
Florence welcomes you there for a tasting while telling you the story of this exceptional terroir.

A winegrower and her terroir
Attentive to the environment and respectful of the land of her ancestors, Florence Guy follows in her parents' footsteps by preserving their know-how and their love of a job well done. She knew how to bring all the necessary modernity, to impose her personal touch, in particular by the passage in organic culture from 2008. These lands are her roots.
Just like François Guy, who has never ceased to move forward by devoting his life to his vineyard, his daughter makes each cuvée inspired by this place steeped in history and charm. The result: wines made from quality grape varieties, full of elegance and finesse which unfold their subtlety in the hollow of a unique and privileged terroir.
Our wines
Over time, Château Coujan's 50 hectares of vineyards have been planted with a wide variety of grape varieties, allowing us to fully express the personality of this exceptional terroir in our wines.
White, red or rosé, we can successfully interpret the criteria of the AOP Saint Chinian (several medal-winning wines) as well as take advantage of the diversity of this palette to offer you attractive and inventive wines under the IGP Coteaux de Murviel.

In white

Roc & Rolle
- A fresh and fruity wine with original aromas -

Grapes: 100% Rolle
Terroir: Vines on hillsides 140 meters above sea level, soil of sandstone pebbles on draining rock of fossilized coral.
Yield: 40 hl / ha
Vinification & Aging: Skin maceration, direct pressing and cold settling. Fermentation in vats under temperature control and aging on fine lees,
Packaging: Burgundy character bottles in cardboard boxes of 6 lying down bottles.
Joli blanc wood
- A full and harmonious wine -
PDO Saint Chinian
Grape varieties: 36% Grenache, 33% Roussanne, 31% Rolle
Terroir: Vines on hillsides 140 meters above sea level, soil of sandstone pebbles on draining rock of fossilized coral.
Yield: 25 hl / ha
Vinification & Aging: Skin maceration and direct pressing, cold settling.
The grape varieties of the PDO Saint Chinian Blanc ferment in demi muid (600 l.) of new wood before maturing on fine lees.
Blending and bottling in March.
Packaging: Bourgogne Ducasse bottles in cardboard boxes of 6 bottles lying down.

The last harvest of the year is harvested in November
when the grape juice concentrated on the stump -

Terroir: Vines on hillsides 140 meters above sea level, soil of sandstone pebbles on draining rock of fossilized coral.
Yield: 5 hl / ha
Vinification & Aging: The botrytised grapes are harvested by hand and vinified with the concentration of aromas that nature has given us.

rosé Tradition
- A frank Rosé, with good length in the mouth -
AOP Saint Chinian rosé
Grape varieties: 65% Mourvèdre, 35% Syrah.
Soil: Vineyards on hills 140 meters above sea level, soil gravel sandstone rock drainage on fossilized coral.
Yield: 40 hl / ha
Vinification & Aging: Rosé de saignée. Maceration on lees. Temperature-controlled fermentation 17-19° C.
Packaging: Burgundy bottles character in case of 6 horizontal bottles.

Cuvée Terrasses
- A light and fruity pleasure wine -

Grape varieties: 40% Syrah, 60% Pinot.
Terroir: Vines on clay-limestone slopes 140 meters above sea level. Sandstone pebble soil on a draining rock of fossilized coral.
Yield: 40 hl / ha
Vinification & Aging: Destemmed harvest, traditional vinification by terroir.
Short maceration and fermentation at low temperature (17/18 °).

La Pinot Noir

Terroir: Vines on clay-limestone hillsides at an altitude of 140 meters. Sandstone gravel soil on a draining rock of fossilized coral.

Vinification & Aging: Destemmed harvest, traditional vinification by terroir.
Short maceration and temperature control.

In the sun of Martial
- A powerful aroma of fruit, a velvety sensation -
Grape varieties: 60% Grenache noir. 40% Syrah.
Terroir: Vines on clay-limestone slopes 140 meters above sea level. Sandstone pebble soil on a draining rock of fossilized coral.
Yield: 40 hl / ha
Vinification: Wine without any addition of sulphites. Destemmed harvest, vinification by terroir. Short maceration and fermentation at low temperature (17/18°C).
Packaging: Bourgogne Caractère bottle in a 6-sided cardboard box.


Cuvée Gabrielle de Spinola
- A wine full of fruit, with silky tannins, to drink young
but who also knows how to age with charm -
PDO Saint Chinian
Grape varieties: 67% Syrah; 10% Mourvèdre, 23% Grenache;
Terroir: Vines on hillsides 140 meters above sea level, soil of sandstone pebbles on draining rock of fossilized coral.
Yield: 25 hl / ha
Vinification & Aging: Destemmed harvest, traditional vinification by terroir, maceration of 15 to 20 days under controlled temperature.
Aging 2 years in vats.

Bois Joli Rouge
- A warm and ample cuvée from our oldest vines -
PDO Saint Chinian
Grape varieties: 60% Syrah, 40% Mourvèdre
Terroir: Vines on hillsides 140 meters above sea level, soil of sandstone pebbles on draining rock of fossilized coral.
Yield: 20 hl / ha
Vinification and Aging: Destemmed harvest, traditional vinification. Pigeage, maceration for 30 to 35 days under temperature control and aging for 14 months in 600 liter demi-muid (Allier oak).

Coral Island
- This exceptional cuvée is only produced in the best years, those where the "delicate grape" Mourvèdre expresses itself in a full and complete way -
AOP Saint Chinian
Grape varieties: 100% Mourvèdre. Our 12 ha of Mourvèdre allow us a precise plot selection.
Terroir: Vines on hillsides 140 meters above sea level, soil of sandstone pebbles on draining rock of fossilized coral.
Yield: 15 hl / ha
Winemaking & Aging: Harvest de-stemmed, traditional winemaking.
Pigeage and maceration for 35 days.

Spirits

Marc from Languedoc IG
Origin: Based on organic Marc de Syrah from Coujan.
Elaboration: Distillation on a copper still.
The first pass at 30 ° gives us the spirit of wine, it is distilled a second time, the head and tail are removed to keep only the heart warm; the best of the spirit of wine.
The marc owes its amber color only to time. It is due to its passage in barrels for 3 years.
Packaging: 50cl transparent spirit bottle.

Fine du Languedoc IG
Origin: Based on organic wine from Coujan.
Elaboration: Distillation on a copper still.
The first pass at 30 ° gives us the spirit of wine, it is distilled a second time, the head and tail are removed to keep only the heart warm; the best of the spirit of wine.
This Fine owes its amber color to time. A 13-year aging in barrel which also gives it its personality.
Packaging: 50cl transparent spirit bottle.

1917 - The spirit of Geneviève
- An intensive nose of juniper in a beautiful harmony of fruits and spices -
Origin: Based on organic red wine from Coujan.
Elaboration: Maceration of juniper berries, garden pomegranates, prickly pears, rose petals as well as various other "secret" ingredients, all from Languedoc.
Directions for use: To drink pure with an ice cube or a light tonic so as not to replace the sweet aroma of this product.
Packaging: 50cl transparent spirit bottle.

Olive oil
Olive oil
Passionate about olive cultivation, François Guy created the first olive groves in Coujan in 1964. The two current orchards now cover 5 hectares and produce an oil with the taste sought after by gourmets.
The variety is Lucques, a typical Languedoc olive.
The olives are cold pressed without chemicals and the resulting oil has the “Natural Product” label.
Yield: 7.4 kg / l
Variety: Lucca. Oleic acid: less than 0.8 gr / l
Harvest: manual in December.
Tasting: sweet aromas without aggressiveness.
Packaging: 50cl bottle and 5 liter cans.
